Did you all have a fun day making Pancakes?? I do think it’s funny that us brits only tend to make them on the 1 day a year…. when theyre always so delishious!! What type did you make and what’s your topping of choice?? Me… I’m a lemon sugar kinda gal, however this year I decided to make some little scotch drop pancakes (ameriacan stylie) and they were yummy!!!!

Here’s my recipie (its super easy)

Ingredients

will make about 12ish
  • 125 g self-raising flour
  • 2 tsp caster sugar
  • 1 egg
  • 1 tbsp melted unsalted butter
  • 150 ml semi-skimmed milk
  • sunflower oil for cooking
Prep
1.
Put the flour in a bowl with sugar. Make a well in the centre and add egg, melted butter and a little of the milk. Gradually stir in the remaining milk a little at a time, to make a fairly thick, smooth batter. easy!

Heat a large, heavy-based frying pan (or in my case a wok) over a moderate heat and grease it with a bit of oil. (you dont need much!)

Using a dessertspoon, pour the batter from the pointed end (rather than the side of the spoon) to make neat, round drop scones. (this really works!) You should be able to cook 4 scones at once. Cook for about 2 minutes- the scones should be golden brown underneath.

Using a palette knife, flip the scones over and cook for a further 1–2 minutes or until golden brown on the other side.
5.
Serve with an array of toppings… my fave was creme freche and blueberries and a sprinkling of golden caster sugar! The housemates also recommend, jam, honey, choc spread, lemon/sugar, maple syrup!
